Is there a hitch at right angle to a dowel that resists torsional slippage? I would like to hitch rope to a dowel and then wind the rope onto the dowel without the hitch slipping.

I have a forearm exercise bar that has the same scenario.  To make it easy to untie someday, I've used four turns/coils finished off with a Gnat Hitch:

Different angles of attack besides knot itself
Relative size of cord to host, how well seats are considerations.
Seems could tape /staple end of cord down to seize and always keep 2-3 full turns on dowel as reducer to buffer seizing load, especially Crossed Turns.
Then same with (especially Crossing) Turns pre-fixxing Binding knot of choice
Small piece of inner tube wrap can edit mating frictions value.
The way Tenex flattens on arc pulls and rounds on linear pulls might be helpful.
