Leather for knotted strand coverings?

Hi all, I am in awe of some of the fancy work around that has had the strands carefully stitched with light leather before working into a knot of some kind. for example becket bolts or even individually covered strands on a grummet...god only knows how.

My question is to you old salts, what weight canvas or leather should be used for greater ease of stitching and also where are some good places to shop for it? any advice you may have on actual stitching that I might struggle without would be greatly received. thanks very much in advance.
