You have to plan your Over Unders in advance to make an even looking Gaucho knot.  When you look at one of the Leads in the photo, it has 7 crossings from the top of the knot to the bottom of the knot.  You could do O3, U1, O3, which will make a nice pattern, or O2, U1, O1, U1, O2, which will look pretty much like a regular TH.

In planning a Gaucho, you want to get an idea of how you want the layout, and then count leads.  As with all things, it takes practice.  What you have is looking pretty good, can't wait to see some finished work.
